1 Natur Air, 400 g. This aerator and emulsifier is made from potato protein. This neutral-tasting, plant-based bulking agent can replace powdered or liquid egg white in a number of applications, such as egg-free macaroons, vegetable mousses and cocktails. It is also used to emulsify preparations such as sauces (for vegetable mayonnaise, for example).

Préconisation d'emploi

    Recommended dosage: 1 - 3 %
    dissolve well in hot water (100°C), then mix. Recommended for meringue application for example.
    Dissolve well in water at room temperature (20°C), then mix.
    Recommended for the macaroon application for example.
