1 Natur Lin, 900 g. This thickening and stabilizing agent is made from linseed vegetable fiber. It can replace gums (e.g. Xanthan). With its strong capacity to stabilize aerating, it works in synergy with Natur Air to reinforce the stability of the aerated system. It stabilizes frozen products and minimises syneresis. In combination with Natur Agrum, it helps texturize and stabilize ice cream and sorbet in an optimal way, with no aftertaste. More info

Préconisation d'emploi
- Recommended dosage: 0.2 % - 0.3 % to stabilize 0.2 - 5 % to thicken and emulsify. Dissolve in hot or cold water, fat or fruit puree (better functionality when hot).
- If used in high doses, it is recommended to dissolve the fibers at at least 70°C. Mix the mixture with a hand blender for a few minutes to hydrate the fibers. After having solubilized the fibers, leave to rest for at least 2 hours in the fridge for optimal hydration.
