1 Natur Alg, 200 g. This gelling agent is made from gracilaria seaweed powder. This innovative seaweed fiber has a neutral taste and makes it possible to obtain a hot gelled texture. It is a clean label alternative to plant-based gelling agents (e.g. carrageenans, pectins) for making pectin-free fruit jellies, for example. This alternative to carrageenan is useful for many applications (panna cotta, toppings, vegan mousses and creams, milkshakes, ice creams).

- Recommended dosage: 0.1 - 3%
- • Disperse Natur Alg in the cold liquid preparation
- • Bring to the boil to ensure complete hydration and activate the gelling properties.
- • Use the preparation hot or pour into the desired container
- • Leave to cool so that the gel forms. The gel sets at the temperature of 40-45°C.
