Recipe for ten 8 cm tarts
CREAMY CHOCOLATE
- 323 g - Milk
- 323 g - Cream
- 32 g - Sugar
- 78 g - Egg yolks
- 220 g - Black covering chocolate 70%
- 19 g - Cocoa pure paste
CARAMEL
- 110 g - Sugar
- 110 g - Glucose
- 220 g - Cream
- 1 piece - Vanilla pod
BROWNIE BISCUIT
- 60 g - Sugar
- 120 g - Cassonade
- 80 g - Almonds slighlty crushed
- 64 g - Egg yolks
- 96 g - Egg whites
- 70 g - Covering chocolate 70%
- 180 g - Butter
- 40 g - Flour
- 14 g - Cocoa powder
DARK CHOCOLATE SPRAY ON FINISH
- 150 g - Dark covering chocolate 70%
- 150 g - Cocoa butter

CREAMY CHOCOLATE
Make a custard with the milk, cream, sugar, and yolks. Then add the squeezed gelatin. Make an emulsion with the chocolate and pure cocoa paste. Blend, then add the the bottom of the shell. Leave a few minutes in the freezer then add caramel before flocking.

CARAMEL
Cook sugar and dry glucose with caramel at 185 ° C. Infuse/mix the cream and vanilla pod, then pour over the caramel. pour the caramel over the creamy chocolate.

BROWNIE BISCUIT
Heat the almonds for about 6 minutes in the top shelf of oven (180°c) to dry. Mix the yolks, brown sugar and half of the sugar together and add the mixture of butter and hot melted chocolate. Add the sifted flour and cocoa powder, then the slightly crushed almonds, and lastly beat the whites and the remaining sugar till firm.Bake in a fan over at 180°c for about 14 minutes. Then cut into 1.5 cm squares.

DARK CHOCOLATE SPRAY ON FINISH
Mix together, then blend. Flock the tarts in their cases to keep them neat.
