Emul F

Emul F is a concentrate of glycerol monostearate obtained by esterification of glycerol and fatty acids. This emulsifier is best used with fatty preparations.

Emul F est un concentré de monostéarate de glycérol obtenu par estérification du glycérol et d’acides gras. Cet émulsifiant présente une affinité plus importante pour les milieux gras.

Propriétés : émulsifiant, modulateur du point de fusion des matières grasses.

RECIPE WITH EMUL F

Textured infused oil

Recommended dosage: 3 - 8%.

Recommended for use:
• Dissolve hot at least 60°C in a fatty solution.

Typical applications include: creamy and pasty textured oil at room temperature, improving the softness and conservation of high-fat fine bakery products.
