WarmTex is a corn starch improved by a specific cooking process that gives it special properties. It is classified as a conventional starch, namely: corn starch. It develops its specific texture when heated and has a significantly higher cooking resistance than conventional starches.

Properties: thickener

Recommended dosage: 2 - 5%.

Recommended for use:
• Dispersed cold in the preparation.
• Bring to a boil 1 to 2 minutes, stirring vigorously

Typical applications include: pastry creams (replacing cream powder), béchamel sauces for baked or simmered products.

Comment / Limitations: improves cooking performance compared to conventional starches (corn starch or potato starch). “clean” label because of the corn starch. “Top tip”: the dry extract content (sugar, fibre, etc.) or fat content of the recipe can impact the hydration of the starch and therefore delay the development of its functionality or even simply reduce it. In this case, it will be necessary to consider reviewing the order in which the ingredients are incorporated by encouraging the use of cold starch with the liquid part of the recipe.
