ColdTex+ is a thickener derived from tapioca starch chemically modified to provide it with special properties. It can give viscosity directly when cold and a very supple, smooth and creamy texture. Preparations made with ColdTex+ can be deep frozen and withstand moderate cooking.
Recommended dosage: 0.5 - 8%.
Recommendations for use: • Dissolve cold with a whisk or mixer if the dosage is high.
Typical applications include: thickened fruit based preparations or delicately flavoured fruit reductions, cold fruit or vegetable creams, soups, sauces.
Comment / Limitations: Tapioca starch has a more neutral taste and appearance (colour) than other starches. It also provides much more cream for sauces and other low-fat applications. “Top tip”: the dry extract content (sugar, fibre, etc.) or fat content of the recipe can impact the hydration of the starch and therefore delay the development of its function or even simply reduce it. In this case, it will be necessary to consider reviewing the order in which the ingredients are incorporated by encouraging the use of cold starch with the liquid part of the recipe.
